Recipe of the day: Sweet Potato Fries

I'm serving grass fed/finished ribeyes from US Wellness (see link below - I love this place - but if you can find local, that's even better!)  My husband loves to grill, so he'll be grilling the steaks which will marinated simply in olive oil, garlic and salt.  With it I'll serve sweet potato fries.  YUM!!  I'll serve it with some asparagus that has also been grilled.  Looking forward to tonight!


Sweet Potato Fries
Ingredients
  • 2 sweet potatoes (1 pound)
  • 2 tbsp. olive oil (I used EVOO spray)
  • 1 tsp sea salt (I used No Salt salt substitute)
  • 1/2 tsp. dried oregano
  • 1/2 tsp. paprika
  • 1/4 tsp. ground black pepper

Instructions

Preheat oven to 425 degrees Fahrenheit.
Peel the sweet potatoes. Cut into 3-inch long and 1/4-inch wide sticks.
Toss the potato sticks with the oil, sea salt, oregano, paprika and black pepper. You can add any other spices you'd like!
Spread the sticks on the baking sheet and bake for 15 minutes.
Turn the sweet potato fries after 15 minutes and bake approximately 15 minutes more or until a light brown. Be careful when turning because the sticks will be soft
